I love to experiment with flavours and textures, especially with extravagant cakes! Soft sponge encased in creamy buttercream, with the crunch from Oreos and the delightful chewy and crumbly texture of meringues. It’s a beautiful thing.
Meringue kisses are a simple but effective way of decorating a cake. They add both height and another texture element, and they’re playful and cute to look at. They’re also pretty fun to make! As for the Oreos, well who doesn’t love them?!
This particular cake was for a masquerade cocktail party. The bottom tier is a dark chocolate sponge with a mocha buttercream, the top tier is a vanilla sponge with vanilla buttercream. There’s raspberry jam sandwiched between each layer.
It was a pretty hefty number – carrying this cake was a great arm workout!
